Fidget Pie

Temperature: Gas mark 5, 190oC, 375oF

Serves:4

Cooking Time: 45 minutes

Ingredients:

  • 225g (8oz) back bacon, roughly chopped
  • 450g (1lb) shortcrust pastry
  • 1 medium onion
  • 225g (8 oz) cooking apples, peeled, cored and roughly chopped
  • 1 tblsp fresh parsley, chopped
  • 150ml (1/4 pint) medium-dry cider
  • 1 eggs, to glaze


  • Method:

    Pre-heat the oven. combine the bacon, onion and apples in a 600ml (1pint) pie dish. Add the parsley to a little flour along with the cider, a little at a time, then pour into the pit dish.

    Roll out the pastry and place on top of the pie, flute round the edge to seal. Brush the pastry with egg and bake until the pastry is golden.

    Fidget the catApparently fidget pie was traditionally made at harvest time to feed the harvest workers. It is a particular favourite of mine perhaps partly because my cat is called Fidget and frequently deserves to be put in a pie! I also make variants including minced or diced pork and bacon, and sometimes I top it with mashed potato and call it 'pig-man pie'. My children love it!
