Fillet Steak with Red Pepper Sauce

Suitable cuts: Fillet steak

Serves:2

Cooking Time: 15 minutes

Ingredients:

  • 2 beef fillet steaks (approx 3cm thick)

  • For the sauce
  • 12.5g (0.5oz)butter soft
  • 10ml (1dsp) plain flour
  • 1 onion finely chopped
  • 2 cloves garlic, crushed
  • 1/2 red pepper, seeded and diced
  • 15ml (1tbsp) ground paprika
  • 15ml (1tbsp) ground cumin
  • 15ml (1tbsp) marjoram
  • 30ml (2 tbsp) whipping cream
  • 40ml (4dsp) creme fraiche


  • Method:

    In a small bowl mix together the butter and plain flour until it forms a paste. Place the fillet steak under a preheated grill or fry for approximately 5-6 minutes each side (medium). Meanwhile, in a suacepan, melt the butter and gently fry the onion, garlic and pepper until soft. Add the stock, spices and marjoram. Stir through the butter and flour paste to thicken. Stir through the whipping cream. The sauce can be blended if wished.

    Serving Suggestion:
    Drizzle the sauce over the steaks, top with a spoonful of creme fraiche. Serve with new potatoes and asparagus.
