Fillet Steak with Red Pepper Sauce

For the sauce
Method:
In a small bowl mix together the butter and plain flour until it forms a paste. Place the fillet steak under
a preheated grill or fry for approximately 5-6 minutes each side (medium). Meanwhile, in a suacepan, melt the butter
and gently fry the onion, garlic and pepper until soft. Add the stock, spices and marjoram. Stir through the butter
and flour paste to thicken. Stir through the whipping cream. The sauce can be blended if wished.
Serving Suggestion:
Drizzle the sauce over the steaks, top with a spoonful of creme fraiche. Serve with new potatoes and asparagus.
