Fruity Glazed Roast Pork
Suitable cuts: loin, shoulder or leg joint
Temperature: Gas mark 4-5, 180oC, 350oF
Serves:4-6
Cooking Time Detail: Medium: 30 mins per 450g, half kg (1lb) plus 30 minutes
Well done: 35 mins per 450g, half kg (1lb) plus 35 minutes

Method:
Weigh the joint and calculate the cooking time. Place the joint on a rack in a roasting tin.
Open roast in a preheated oven. Meanwhile make the glaze. Mix all the ingredients in a pan, bring to the boil
and heat vigorously for 5-8 minutes. Glaze the pork 20 minutes before the end of cooking time, return to oven.
Reglaze 10 minutes later.
Serving Suggestion:
Serve the pork sliced with a selection of roasted potatoes, carrots, parsnips and onions
